  • Burned Christmas Cake

    Due to a minor error involving old and new measurements and fan ovens our first Christmas cake was severely burned. A bit of internet searching came up with a superb rescue recipe

    200 g dark catering chocolate
    100g double cream

    Make ganache

    While still warm blend in 400-800g of less burned cake and some rum

    Set on small flan tin on digestive biscuit base

    Top with crystallised ginger

    Chill/freeze

    Eat in small quantities with good ice cream topping

    It's better than the original cake. May not be on Weightwatchers approved list though.

    Sounds reasonable to me. Care to quantify "some" as in Rum?

    Just take it easy. There's always tomorrow. And if tomorrow doesn't come, you won't have wasted any effort on it.
