You will find a one touch button for adjusting the iso .. 200 would be good but up to 400 when the lighting isn't so good. Once you have made an adjustment the effects will be clear to see and you can adjust accordingly.
Regards the sharpening adjustment, you will find that within the menu and the procedure will be described in your booklet. Only takes half a minute.
The canon 650D is due out and might be worth waiting for and, depending on your budget, you might consider the 7D
