Focus lock.

Hi I have a Sony NEX3....Can someone confirm that I can lock focus with the shutter button then re compose picture?....does this work in manual mode? Thanks.

P.S.

I'm reading Bryan Petertson's book on exposure. Getting confused now...he says that to meter for ...say snowy scenes...1st...meter the sky, then recompose for the landscape. Does that mean pointing at the sky and using the half pressed shutter action...then recompose. Wont this also focus, then save the focused sky also?
